With a kitchen robot, we crush the oil, ginger, mint, garlic, salt, grated lime skin, and lime juice. If we do it with Thermomix, we chop 10 sec/vel 7. We put this marinade in a large bowl with the turkey breast, mix with a spatula and let marinate for 1 hour.

After this time, the better, we cook the bowel contents in a pan until the turkey is done. If we do it with Thermomix, 5 min / 120ยบ / reverse turn/vel spoon. We remove it to a bowl and reserve. We put the avocado, salt, pepper and lemon juice in a tall glass and crush it. If we use the Thermomix we chop 30 sec/vel 5.

To assemble the quesadillas, we split the wheat pancakes in four and lightly pass them through the pan. We place half the pieces of pancakes spread on plates and on them we distribute the avocado, turkey, and lettuce. We cover with the rest of the pieces of pancakes and serve.

With what to accompany the turkey and avocado quesadillas

This recipe for turkey and avocado quesadillas, with and without Thermomix, is ideal for an informal dinner with friends. I advise you to toast the wheat tortillas at the last moment, just before filling them, so that they do not harden too much when you go to serve them.
